New café registrations in Istanbul rise 293% since 2019, as chains take a bigger share.
Istanbul recorded 774 new café company registrations in 2025, up from 197 in 2019, and 554 more in the first eight months of 2026. Across Turkey, five large chains now run about 1,570 branches between them, the combined count of 61 chains in 2018, so a growing share of new branches belong to chains.
