Çağatay Gülabioğlu, Turkey's first Q Grader, founded Kronotrop in 2012 and left in 2014 to start Probador. He roasts on Giesen W15 and W1 machines in 6kg or 12kg batches, and won the SCA Turkey Roasting Championship from 2015 to 2017. Probador also hosts the country's only Q Grader exams in the building's lab. The tasting room menu runs from batch brew and V60 to flat whites and cortados.
The orange Giesen roaster runs in the middle of the shop under two steel flues, beside shelves of amber cupping jars. A long counter clad in light blue subway tile runs along one wall, with a communal bench table under a steel mezzanine opposite. Folding glass doors open the whole front onto the pavement, where tables sit under the shopfront.
