One of Turkey’s first specialty roasters, now thirty-five branches across the country.

Çağatay Gülabioğlu founded it in Galatasaray in 2012, roasting in-house on a one-kilo Toper Cafemino. Chef Mehmet Gürs became a partner around 2013, and by the time Fresh Cup visited in 2014 the roastery had moved to a converted test kitchen in Atatürk Oto Sanayi with a Loring S15 Falcon, roasting for Gürs's restaurants, Mikla among them. Gülabioğlu has since sold the company.

The branches now reach Ankara, Antalya, Bursa, Gaziantep, Kayseri, Konya, and Sakarya, with more than three hundred staff. Current single origins include Kenya Gakuyu-ini AB, Rwanda Huye Mountain, Peru Huabal from above 1,800 metres in Cajamarca, and Guatemala Female Growers.

At this shop

Set back from the street in a garden of pine trees on Ömerpaşa Sokak, the terrace faces a glass office tower over the treeline. The kitchen serves out through a glass-fronted hatch under copper pendant lights, straight into the garden. Most seating is outside on stone paving, with a glazed room at one end holding steel-framed windows and a pastry counter.
